I have had several requests to share this recipe since I mentioned them in a blog post from Belize. They are great for breakfast on the run or a snack. Enjoy!
Apple Breakfast Cookies (Recipe from my Aunt Mary and tweaked by my mom)
1/4 cup softened butter
3/4 cup brown sugar OR 1/4 cup honey
1/2 cup unsweetened applesauce
1 cup wholegrain wheat flour
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. baking soda
1 cup uncooked quick oats
1/2 cup dried apples chopped (can also use fresh apples chopped and I put in a generous amount)
1/2 cup dried cranberries
1/2 cup walnuts (or pecans or almonds)
Combine butter and sugar, add eggs then applesauce. Add dry ingredients. Fold in apples, cranberries and nuts. Spray cookie sheet. Bake at 350 degrees for 13-15 minutes.
